In Parés Baltà’s case, producing wine involves more than just growing the vines – it’s all about cultivating the land that comes with it. The family-owned winery practices organic viticulture when tending its five estates, using its flock of sheep to fertilize the vineyard and bees for pollination and flowering season.

Appearance: A deep, dark garnet colour. 

Nose: Full of spice and smoke, along with blackberry, black olive, dried herbs, and vanilla. 

Taste: The palate is medium-bodied and soft, with blackberry flavours along with pepper spice, more black olive, and a touch of oak.

Finish: Lots of berries and spice are on the finish with a final wrap of dusty tannins and a subtle touch of earthiness.

Food pairings: Pasta, Soft cheeses, Red meat, Rice dishes, White meats, Charcuterie.

About the producer: At Parés Baltà they ecologically cultivate the vineyards without the use of herbicides, pesticides, or any chemical fertilizers. They have a flock of sheep that takes care of the vineyards after the harvest, applying fertilizer in the process.
